    Cauliflower Steaks with Gremolata and Green Olives

    Looking for a light and refreshing dose of your daily veg? You gotta try these CAULIFLOWER STEAKS with GREMOLATA and GREEN OLIVES – like TONIGHT because they are DELICIOUS!! Looking for more than just a side dish? No problem! Make it a meal and serve over spaghetti noodles with some marinara sauce. SO simple, SO good, and SO healthy!

    Cauliflower Steaks with Gremolata? What is that?

    Gremolata is a zesty Italian herb condiment. It provides a huge flavor boost and freshness to many types of food. It typically includes simple ingredients like parsley, garlic, lemon and olive oil. Oh, and it only takes a few minutes to make! There are many variations to this condiment including lime, cilantro, shallot, horseradish, and pine nuts. It’s somewhat similar to chimichurri sauce and can be spooned on toast, pastas, potatoes, beans, soups and stews.

    My first time trying gremolata was at a restaurant called Brickhouse here in Minnesota. They always have vegan options and specials and if I lived closer, I’d be there A LOT more devouring all of their delicious dishes! So THANK YOU Brickhouse for offering plant-based menu selections for all of us veg heads out there!!

    Can We Talk About Olives For a Second?

    Olives and olive oil have a long history of of reported health benefits and there is a growing body of scientific evidence to back up these claims. Check out some of their superpowers so you don’t feel guilty adding more of these little greenies to your diet:

    • Low in cholesterol
    • Good source of dietary fiber which the body needs for gut health
    • Rich in iron
    • Rich in copper
    • Heart-healthy because they’re full of monounsaturated fatty acids
    • Olive oil is high in antioxidants
    • Olives can increase nitric oxide production, improving vascular function by promoting blood flow to tissues
    • They contain polyphenols which can improve bone mineral density by reducing degeneration
    • Olives contain vitamin E, an antioxidant linked to improved cognition
    • High-antioxidant foods like olives can lower your chances of certain cancers
    • Dietary fats such as olives will help absorb nutrients from other fruits and vegetables when consumed together

    Cauliflower Steaks with Gremolata and Green Olives

    You can't go wrong with thick-cut cauliflower steaks drenched in an Italian gremolata, topped with salty olives and sweet peppers. Better yet, serve these guys over spaghetti with some marinara sauce for a light and refreshing meal!

    Ingredients
      

    • 2 Heads Cauliflower
    • 2 tablespoon Avocado Oil Or, Olive Oil
    • ½ Cup Green Olives Sliced
    • 1 Anaheim Pepper Sliced, Optional

    Gremolata

    • 1 Bunch Flat-Leaf Parsley Mostly leaves, some stems ok
    • 3-4 Green Onion Stalks White parts removed
    • 3 Garlic Cloves
    • ¼ Cup Olive Oil
    • 1 Lemon, Zested
    • 1 tablespoon Lemon Juice
    • ¼-½ teaspoon Red Pepper Flakes Optional
    • Salt and Pepper to Taste

    Instructions
     

    • Preheat oven to 400°F
    • Remove outer leaves from cauliflower. Carefully cut cauliflower into 1 inch steaks. With 2 heads of cauliflower you should easily get 4 steaks (reserve extra cauliflower for another use)
    • Heat avocado oil in a large cast-iron skillet over high heat. Once hot, add cauliflower steak and sear each side for about 3-5 minutes
    • Sprinkle with salt and pepper and transfer to oven. Bake until tender, about 10-15 minutes
    • While cauliflower is baking, make the gremolata by finely chopping the parsley leaves and green onion. Mince or press the garlic. Combine everything with the lemon juice, zest, red pepper flakes, and olive oil. Add salt and pepper to taste.
    • Top cauliflower steaks with gremolata, green olives, and peppers. For more of a meal, serve over spaghetti with marinara sauce!
