This really is THE BEST VEGAN MAC AND CHEESE – HACK! Plus, it’s ready in under 15 minutes and there are only SIX ingredients. Give this DAIRY-FREE version a shot and let me know what you think in the comments!
Macaroni and cheese has always been one of my favorite foods. It’s warm, cheesy, gooey, buttery, creamy…pretty much COMFORT IN A BOWL if there is such a thing. This version is A MUST TRY!! Our family is always so happy to see this one on the menu!
Let’s Make the Best Vegan Mac and Cheese
This one is super easy! Boil your pasta according to the directions on the package. While your noodles are cooking, make your sauce by blending the following in a blender until super creamy:
- Daiya American Style Cheese Slices – Make sure to get the AMERICAN, not CHEDDAR slices.
- Cashews – If you’re not using a high-speed blender, soak them in hot water for at least 30 minutes to soften.
- Water
- Nutritional yeast
- White or mellow miso paste
- Vegan bouillon – I like Better than Bouillon No-Chicken Base
When noodles are done cooking, drain and add back to pot. Pour blended cheese sauce in and stir well to combine. Let mac and cheese sit for 5 minutes for sauce to thicken (this is the hardest part).
Make it Even Better
There are so many variations to the classic mac and cheese. You could add garlic, other types of cheese, buffalo sauce, salsa, vegan bacon or ground, chili beans, hot sauce, veggies, or a crunchy topping like panko or crispy onion strips. Make it spicy and throw in some cayenne, red pepper flakes, or jalapeños. Or, go old school and add some sliced up vegan hot dogs!

Ingredients
- 16 Ounces Pasta
- 1 Package Daiya American Style Cheese Slices
- 1 Cup Cashews
- 2 Cups Water
- 2-3 tablespoon Nutritional Yeast
- 1 teaspoon White or Mellow Miso Paste
- 1 teaspoon Vegan Bouillon I like Better Than Bouillon No-Chicken Base
Instructions
- Cook pasta according to package. Drain and return to pot
- In a blender, add remaining ingredients and blend on high until super creamy (at least 1-2 minutes). If not using a high-speed blender, soak cashew in hot water for at least 30 minutes to soften
- Pour blended cheese sauce over pasta and stir to combine. Let sit for about 5 minutes for sauce to thicken
