Press tofu to release excess water for at least 15 minutes. Once pressed, cut into 9-12 triangles
Mix BBQ sauce, olive oil, and cajun seasoning together. Coat tofu triangles with BBQ mixture and transfer to a lightly greased baking sheet. Bake for 25-30 minutes, flipping halfway through
While tofu is baking, make the maple mustard dressing by whisking all ingredients together.
Build salads by starting with mixed greens, then add all veggies and baked BBQ tofu triangles. Top with avocado, sunflower seeds, and shoestring potatoes for crunch. Serve with a side of dressing!
