Ingredients
  

  • 1 Bag Gardein Beefless Ground
  • 1 Packet Taco Seasoning Or, homemade using chili powder, cumin, garlic powder, onion powder, paprika, oregano, salt, and pepper
  • 1 Can Chili Beans I like Spicy. Don't drain!
  • 1 9 Oz Bag Corn Chips Like Fritos. Crushed
  • 2 Heads Romaine Chopped
  • 1 4 Oz Can Black Olives Sliced
  • 2-3 Roma Tomatoes Diced
  • 1 Green Pepper Diced
  • 1-2 Jalapeños Sliced

Vegan Thousand Island

  • ¾ Cup Vegan Mayo
  • 2 tablespoon White Onion, Minced
  • 2 tablespoon Dill Pickle Finely Chopped
  • 2 tablespoon Ketchup
  • 1 teaspoon Lemon Juice or Vinegar
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Sweet Paprika
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions
 

  • Start by stirring together all vegan thousand island ingredients. Set aside or refrigerate until ready to mix
  • Brown the Gardein Beefless Gound with ¾ cup water and 1 packet of taco seasoning for about 8-10 minutes over medium heat
  • Wash and prepare all veggies
  • When ready to serve, mix beefless ground, undrained chili beans, and dressing with all remaining ingredients and toss to combine. Optional toppings include avocado, green onions, cilantro, lime, and hot sauce
