Let’s Make this Homemade Granola Bowl with Warm Berry Compote
- Combine the oats and sea salt in a small bowl.
- In another small, microwave-safe bowl combine the peanut butter, maple syrup, and coconut oil. Heat until warm and runny, about 30-45 seconds. Remove and stir in vanilla.
- Pour peanut butter mixture over oats and stir to combine.
- Spread granola out evenly on a baking sheet. Bake for about 20-25 minutes, stirring halfway through
Berry Compote
While the granola is baking, make the quick berry compote. Combine fresh or frozen mixed berries in a small pot. Bring to a light simmer over medium heat.
Continue to cook for about 10-12 minutes, occasionally mashing or breaking up fruit pieces with whisk or fork. Remove from heat and stir in the chia seeds.
