    Homemade Granola Bowl with Warm Berry Compote

    One more reason to eat BREAKFAST – the most important meal of the day! This Homemade Granola Bowl with Warm Berry Compote is filled with protein, fiber, and healthy fats to help fuel your day.

    Let’s Make this Homemade Granola Bowl with Warm Berry Compote

    • Combine the oats and sea salt in a small bowl.
    • In another small, microwave-safe bowl combine the peanut butter, maple syrup, and coconut oil. Heat until warm and runny, about 30-45 seconds. Remove and stir in vanilla.

    • Pour peanut butter mixture over oats and stir to combine.
    • Spread granola out evenly on a baking sheet. Bake for about 20-25 minutes, stirring halfway through

    Berry Compote

    While the granola is baking, make the quick berry compote. Combine fresh or frozen mixed berries in a small pot. Bring to a light simmer over medium heat.

    Continue to cook for about 10-12 minutes, occasionally mashing or breaking up fruit pieces with whisk or fork. Remove from heat and stir in the chia seeds.

    Now the fun part! Start to assemble the bowls with your favorite fruits and toppings. I added banana, kiwis, coconut flakes, and a few more chia seeds. Other toppings might include:

    • Berries
    • Pomegranate
    • Goji berries
    • Chocolate chips
    • Cacao nibs
    • Nuts
    • Seeds
    • Peaches
    • Oranges
    • Mangos
    • Or a drizzle of your favorite nut butter!

    Ingredients
      

    Peanut Butter Granola

    • 2 Cups Oats
    • ½ Cup Nuts Optional – Like almonds, cashews and/or pecans
    • ¼ Cup Peanut Butter
    • 3 tablespoon Maple Syrup
    • 2 tablespoon Coconut Oil
    • ½ teaspoon Vanilla
    • ¼ teaspoon Sea Salt

    Warm Berry Compote

    • 2 Cups Mixed Berries, Fresh or Frozen
    • 1 tablespoon Agave
    • 1 tablespoon Fresh Lime or Orange Juice
    • 1 Tbsp Chia Seeds

    • 2 Cups Plant-Based Yogurt Plain or Vanilla
    • 2 Bananas Sliced
    • 2 Kiwis Optional
    • 4 tablespoon Coconut Flakes Optional

    Instructions
     

    Peanut Butter Granola

    • Preheat the oven to 325°F
    • In small bowl, combine the oats, nuts, and sea salt.
    • In another small, microwave-safe bowl, hear the peanut butter, syrup, and coconut oil until warm and runny, about 30-45 seconds. Remove and stir in vanilla
    • Pour the peanut butter mixture over the oats and stir to combine.
    • Spread granola out evenly on a baking sheet. Bake for about 20-25 minutes, stirring halfway through.

    Warm Berry Compote

    • In a small saucepan over medium heat, add berries, agave, and juice.
    • Let simmer for about 10 minutes, breaking up or mashing the fruit occasionally with a whisk or fork.
    • Remove from heat and stir in the chia seeds.

    Bowl

    • Build bowls by adding granola, warm compote, dairy-free yogurt, banana, fruit, and coconut flakes.
