The ultimate vegan wild rice burgers prepared pub-style with dairy-free swiss and sauteed onions and mushrooms. Serve on a toasted bun with creamy garlic aioli. A true Minnesota classic that can be enjoyed anywhere!
This recipe is inspired by the famous Harvest Moon Wild Rice Burgers served at Fitger’s Brewhouse in Duluth, MN. They’re firm, flavorful, and super satisfying.
Vegan Wild Rice Burger Ingredients:
- Wild rice – Cooked in vegetable broth and cooled before forming into patties
- Plant-based scramble like Just Egg
- Saltine crackers
- Vegan mayo
- Dairy-free parmesan
- Tapioca starch
- Spices: Garlic powder, onion powder, curry powder, cumin, salt, and pepper
To Make:
Combine all the ingredients, mix well, and form into patties. If the mixture is too wet, add more crushed crackers and if it’s too dry, add more plant-based scramble. Heat a small amount of oil in a large skillet over medium-high heat. Add the patties and fry until golden brown on both sides.
Serving Options
Serve these burgers as shown with sautéed mushrooms, onions, dairy-free swiss or provolone, and garlic aioli on a toasted bun. Or, go classic with vegan cheddar, sprouts, tomato, and aioli. Maybe even serve like a patty melt on grilled bread. You could go low carb and serve these burgers on a bed of arugula and add toppings like avocado, tomato, onion, sautéed peppers, pickles, and hot sauce. Plenty of options. You do you!
If you’re using cheese, add that to the burgers right after the first flip and cover with a lid so that your cheese will melt better.

- 1 Sleeve Saltine Crackers Finely crushed
- ⅔ Cup Plant-Based Liquid Scramble
- ½ Cup Vegan Mayo
- ½ Cup Vegan Parmesan
- 2 tablespoon Tapioca Starch
- 1 Tsp Each: Garlic Powder, Onion Powder, Pepper
- ½ Tsp Each: Salt, Cumin, & Curry Powder
Instructions
