Tired of the classic Doritos and Western dressing taco salad? Me too! Switch it up with this game changer vegan taco salad using Gardein Beefless Ground, Fritos corn chips, canned chili beans, and homemade thousand island dressing. Everyone will absolutely love it and I’m pretty sure they’ll even ask you for the recipe.
Bring this salad to a potluck or serve it as a side if you’re feeding a crowd. It makes a great addition to any vegan BBQ spread of burgers, brats (Check out Beyond), hot dogs, corn on the cob, fruit, veggies, and coleslaw.
This recipe makes a very large bowl so I would suggest only mixing the wet ingredients – beans, Gardein, and dressing – into whatever portion you will serve right away as it doesn’t store well once mixed together (the lettuce and Fritos will get soggy).
This vegan taco salad is easy to throw together.
The ingredients include:
- Gardein Beefless Ground
- Taco seasoning
- Spicy chili beans
- Fritos Corn Chips
- Black Olives
- Tomatoes
- Green Pepper
- Romaine lettuce
- Jalapeño
- Vegan Thousand Island Dressing
To switch it up try adding corn, black beans, sour cream, red onion, green chilis, poblanos, red pepper, or vegan cheddar. Make it extra hot and spicy or keep it mild. Use some of the healthier swaps as suggested below or follow the recipe as listed. Top with sliced avocado, green onions, lime, cilantro, or hot sauce. There’s so many variations to the famous taco salad. Experiment and have fun!

Game Changer Vegan Taco Salad
Ingredients
- 1 Bag Gardein Beefless Ground
- 1 Packet Taco Seasoning Or, homemade using chili powder, cumin, garlic powder, onion powder, paprika, oregano, salt, and pepper
- 1 Can Chili Beans I like Spicy. Don't drain!
- 1 9 Oz Bag Corn Chips Like Fritos. Crushed
- 2 Heads Romaine Chopped
- 1 4 Oz Can Black Olives Sliced
- 2-3 Roma Tomatoes Diced
- 1 Green Pepper Diced
- 1-2 Jalapeños Sliced
Vegan Thousand Island
- ¾ Cup Vegan Mayo
- 2 tablespoon White Onion, Minced
- 2 tablespoon Dill Pickle Finely Chopped
- 2 tablespoon Ketchup
- 1 teaspoon Lemon Juice or Vinegar
- ½ teaspoon Garlic Powder
- ½ teaspoon Sweet Paprika
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
Instructions
- Start by stirring together all vegan thousand island ingredients. Set aside or refrigerate until ready to mix
- Brown the Gardein Beefless Gound with ¾ cup water and 1 packet of taco seasoning for about 8-10 minutes over medium heat
- Wash and prepare all veggies
- When ready to serve, mix beefless ground, undrained chili beans, and dressing with all remaining ingredients and toss to combine. Optional toppings include avocado, green onions, cilantro, lime, and hot sauce
