    BBQ Tofu Salad with Maple Mustard Dressing

    This yummy BBQ Tofu Salad with Maple Mustard Dressing is easy and healthy! Prep most of the ingredients while your tofu bakes to perfection in the oven and voila! A delicious and healthy salad for you and your family to enjoy!

    BBQ Tofu Salad Prep

    As always, start by pressing your tofu. Wrap tofu in a kitchen towel and place a 3-5 pound weighted object on top. I use a griddle press and it works great. A sauté pan with a can of soup on top is fine, also. Let the tofu sit for about 15-20 minutes to release excess water.

    While you wait for the tofu, mix together the BBQ sauce, olive oil, and cajun seasoning. If you don’t have cajun seasoning, mix the following together:

    • ½ teaspoon garlic powder
    • ¼ teaspoon smoked paprika
    • ¼ teaspoon onion powder
    • Pinch of cayenne
    • Dash of salt and pepper

    Once your tofu is done pressing, slice it into triangles (aim for about 9-12 pieces). Coat tofu with the BBQ sauce mixture and then arrange on a lightly greased baking sheet. Transfer to the oven and bake at 400°F for about 25 minutes, flipping halfway through.

    This ‘Honey’ Mustard Dressing is super easy and goes perfectly with the caramelized, oven-baked BBQ tofu. Just whisk all the ingredients together and you’re ready for the drizzle!

    Toppings

    We added sliced red onions, cherry tomatoes, avocado, mini cucumbers, sunflower seeds, and shoestring potatoes for some crunch. This salad is pretty versatile so really anything goes for toppings. Purple cabbage, pickled onion, shredded carrots, radish, and croutons would make the cut here if you have them in your fridge or pantry!

    Ingredients
      

    BBQ Tofu

    • 15 Ounces Extra Firm Tofu
    • ¼ Cup BBQ Sauce
    • 1 tablespoon Olive Oil
    • 1 teaspoon Cajun Seasoning Optional

    Maple Mustard Dressing

    • 2 Tbsp Olive Oil
    • 2 tablespoon Dijon
    • 2-3 tablespoon Maple Syrup
    • 1 tablespoon Grainy Mustard
    • 1 tablespoon Lemon Juice
    • ½ teaspoon Salt
    • 1-2 Garlic Cloves, Minced Optional

    Salad

    • 10 Ounces Mixed Greens
    • 10 Ounces Cherry Tomatoes Halved
    • ½ Red Onion Sliced
    • 1 Cucumber Sliced
    • 1 Avocado Sliced
    • 4 tablespoon Sunflower Seeds
    • ½ Cup Shoestring Potatoes Optional

    Instructions
     

    • Preheat oven to 400°F
    • Press tofu to release excess water for at least 15 minutes. Once pressed, cut into 9-12 triangles
    • Mix BBQ sauce, olive oil, and cajun seasoning together. Coat tofu triangles with BBQ mixture and transfer to a lightly greased baking sheet. Bake for 25-30 minutes, flipping halfway through
    • While tofu is baking, make the maple mustard dressing by whisking all ingredients together.
    • Build salads by starting with mixed greens, then add all veggies and baked BBQ tofu triangles. Top with avocado, sunflower seeds, and shoestring potatoes for crunch. Serve with a side of dressing!

    Notes

    If you don’t have cajun, mix these spices together:
    • ½ teaspoon garlic powder
    • ¼ teaspoon smoked paprika
    • ¼ teaspoon onion powder
    • Pinch of cayenne
    • Dash of salt and pepper
