    8-Ingredient Vegan Hot Italian Sausage Pasta

    This 8-Ingredient Vegan Hot Italian Sausage Pasta is perfect for those weeknight dinners, as it’s ready in about 20 minutes and uses only a few ingredients. Your family will think this came from a fancy Italian restaurant but you can proudly take all of the credit for this creamy, delicious, and HOMEMADE pasta dinner they’re about to devour!

    Pot of Vegan Hot Italian Sausage Penne Pasta

    8 Ingredients for this Pasta:

    • 16 ounces Penne Pasta – or any other noodles
    • 1 package Beyond Hot Italian Plant-Based Sausage Links
    • ½ white onion
    • 2-4 garlic cloves
    • 14.5 ounces diced tomatoes
    • ½ cup white wine (optional)
    • ½ cup cashews + 1 cup water
    • 1 cup vegan parmesan – we like this one!

    How to Make Vegan Hot Italian Sausage Pasta:

    • Cook pasta according to package
    • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
    • If your sausage has a casing, remove this before cooking
    • Add crumbled vegan sausage and begin to brown. Continue to break up sausage into smaller pieces as it cooks
    • Add diced onion and minced garlic and sauté for a few more minutes
    • Pour in the contents of the canned diced tomatoes, with juices, and the white wine. Continue to simmer for another 5-8 minutes to allow the alcohol to evaporate
    • Blend the cashews with water until super creamy and then add to the sauce. If you don’t have cashews or a blender, use 1 cup of dairy-free creamer – like this one!
    • Remove from heat and stir in the vegan parmesan. Add salt and pepper to taste
    • Pour over pasta and enjoy!

    • 1 Package Beyond Hot Italian Plant-Based Sausage Links
    • 16 Ounces Penne Or, any other noodle like rotini
    • ½ White Onion Diced
    • 2-4 Garlic Cloves Minced
    • 14.5 Ounce Diced Tomatoes in Can
    • ½ Cup White Wine Optional
    • ½ Cup Cashews + 1 cup water Blended
    • 1 Cup Vegan Parmesan We like Follow Your Heart
    • Salt and Pepper

    Instructions
     

    • Cook pasta according to package
    • Remove casing from sausages, if necessary
    • Heat about 1 tablespoon of olive oil in a skillet over medium-high heat
    • Add crumbled sausage and begin to brown. Continue to break up into smaller pieces as it cooks
    • Add diced onion and minced garlic and cook for another 2-3 minutes
    • Stir in diced tomatoes (with juices from can) and white wine. Simmer for about 8 minutes, or until most of the alcohol has evaporated
    • Blend cashews with water in high-speed blender until creamy and add to sauce. Stir to combine. Note: 1 cup dairy-free whipping cream will work instead of cashew cream
    • Remove from heat, add vegan parmesan, and stir. Taste and add salt and pepper, if necessary.
    • Pour over noodles and enjoy!
