    The Best Vegan Meatloaf

    The absolute best vegan meatloaf recipe ever! It’s moist, firm, and bursting with fantastic flavor. The sweet and tangy glaze that wraps around the entire loaf creates the most perfect sticky, caramelized edges. This one is a classic family favorite (minus the meat) that will fool even your toughest critics as it’s almost undetectably vegan.

    Ingredients for Vegan Meatloaf

    While we love whole foods and healthy dishes, we still crave classic comfort foods like this meatloaf once in a while. There’s no cholesterol, no animal hormones or antibiotics, and only 3 grams of saturated fat per serving, compared to 12 grams in my previous ground beef/sausage version. Plus, there’s still plenty of protein! Here’s what you’ll need:

    • Plant-Based Ground like Beyond or Impossible
    • Plant-Based Sausage like Lightlife, which is similar to Jimmy Dean in my opinion
    • Onion – Grated or minced
    • Minced Garlic
    • Egg Replacer – Ground flaxseed combined with water
    • Grated Carrot
    • Ketchup
    • Vegan-Friendly Worcestershire
    • Sweet and Tangy Glaze – Ketchup, mustard, and brown sugar

    What to Serve with Meatloaf

    Our tradition is to serve this with peas, crusty bread, and buttered noodles. However, mashed potatoes and a veggie side are probably a more traditional pairing. Anything goes, in my option. You could serve this with macaroni and cheese, Brussels sprouts, steamed broccoli, asparagus, roasted sweet potatoes, coleslaw, green beans, corn on the cob, garlic bread, or even french fries. But the real star of the show here is the meatloaf, so whatever you decide to serve on the side will make for a delicious dinner!

    Ingredients
      

    Meatloaf

    • 1 Roll Plant-Based Sausage We use LightLife. See Note
    • 12-16 Ounces Plant-Based Beefless Ground Like Impossible or Beyond
    • 1 Onion Grated or minced
    • 3 Cloves Garlic Minced
    • 1 Large Carrot Shredded
    • 1 Sleeve Saltine Crackers Crushed
    • 2 tablespoon Ground Flaxseed + 5 tablespoon Water
    • ¼ Cup Ketchup
    • ¼ Cup Vegan Worcestershire

    Glaze

    • ½ Cup Ketchup
    • ¼ Cup Yellow Mustard
    • ¼ Cup Brown Sugar

    Instructions
     

    • Preheat oven to 350°F degrees.
    • Combine the ground flaxseed and water. Let stand to thicken for 5 minutes.
    • In a small bowl, prepare glaze by stirring all ingredients together. Set aside.
    • Combine meatloaf ingredients with flaxseed mixture and mix well.
    • Form mixture into two separate loaves on a parchment paper-lined baking sheet. Pour glaze over the top of both formed loaves.
    • Bake for 1 hour, uncovered. Let rest for 10 minutes before slicing.

    Notes

    Beyond Italian Sausage would also work.  Remove casings, if any, before mixing.
