    Ultimate Vegan Chili with Plant-Based Sausage

    This ultimate vegan chili is thick, meaty, and super flavorful!  It’s loaded with both plant-based ground AND sausage, beans, chunky tomatoes, classic seasonings, and all your favorite toppings like cheese, sour cream, and onions.  This meat-free version is perfect for weeknights, weekends, or game days and is sure to amaze even your non-vegan friends and family!

    Topping Ideas for This Vegan Chili

    Chili toppings are endless. Get creative! Offer your guests or family the opportunity to personalize their own bowl. Here are a few toppings to consider:

    • Crackers
    • Vegan cheese
    • Corn chips
    • Tortilla strips
    • Vegan sour cream
    • Jalapeños
    • Sliced green onions or chopped chives
    • Salsa or pico
    • Hot sauce
    • Crushed red chili flakes
    • Avocado
    • Diced red onion
    • Pickled red onion
    • Sliced cherry tomatoes
    • Sliced radishes
    • Tater tots

    Can you Freeze Chili?

    Yes! Let it cool before transferring to a freezer-safe container. When ready to eat, let it thaw in the refrigerator overnight and reheat the next day in a saucepan on the stove or in the microwave (covered, to avoid a splattery mess). I like to spoon the chili into individual containers and freeze it for grab-and-go lunches. 

    Ideas for Leftover Chili

    Leftover chili can be the base for some amazing meals and appetizers. There are so many ways to give this dish a second life! Here are some delicious ideas for you to consider:

    • Chili cheese fries, waffle fries or tots
    • Stuffed burritos with vegan cheese
    • Smothered Enchiladas
    • Mac & cheese topped with chili
    • Chili cheese wonton cups
    • Lasagna
    • Chili cheese stuffed peppers
    • Chili cheese vegan hotdogs
    • Baked potato bar with chili, vegan sour cream, your favorite vegan shredded cheese, and green onions as optional toppings.

    Ingredients
      

    • 1 tablespoon Olive Oil
    • 1 Roll Vegan Sausage
    • 1 Package Frozen Beefless Ground
    • 1 Onion Chopped
    • 1 Green or Red Pepper Chopped
    • 4 Cloves Garlic Minced
    • 1 Bottle V8 – Hot & Spicy – 64 Ounces
    • 2 Cans Chili Beans with Juices
    • 1 28 Ounces Can Diced or Stewed Tomatoes
    • 3 tablespoon Chili Powder
    • 1 tablespoon Cumin
    • ¼ Cup Sugar Optional

    Instructions
     

    • Heat olive oil in a large pot over medium heat. Add onion, pepper, garlic, and vegan sausage. Cook for 8-10 minutes, or until veggies are translucent and sausage is browned.
    • Add the remaining ingredients and stir to combine.
    • Reduce heat and simmer uncovered over low heat, stirring occasionally for 45-60 minutes.
