    I think we can all agree that avocado toast is here to stay, and deservedly so! This Up-Your-Game Avocado Toast with Garlic Infused Olive Oil is really taking it to the next level when it comes to flavor. It’s a great way to start your day with carbs, microgreens, and healthy fats!

    How to Make this Avocado Toast with Garlic Infused Olive Oil

    This avocado toast takes next-to-no skill to make! Just toast some bread, slice some avocado, and add all the toppings. If you want to make this infused olive oil, here’s what you do:

    Pour olive oil in a small saucepan. Add garlic chunks and red pepper flakes and warm over low heat for 10 minutes. Allow to cool, remove the garlic chunks as they can spoil, and transfer to a clean jar. I keep mine in the refrigerator. Here’s what the FDA recommends.

    Why Sourdough?

    Turns out, sourdough is a healthier alternative to white or whole-wheat bread. The slow fermentation process involved in making sourdough bread breaks down the carbohydrates in the wheat, making it easier to digest. It’s a more nutritious choice as it’s higher in vitamins, minerals, and antioxidants. Sourdough also contains prebiotics for a happy, healthy gut! Plus, it’s delicious, especially with avocado!!

    The Beloved Avocado

    Avocado is actually a fruit and while most fruits are high in carbohydrates, avocados are actually high in healthy fats. They’re very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals. These little guys are loaded with antioxidants, fiber, potassium, and heart-healthy fats. Avocados can dramatically increase the nutrient value of other plant foods that you’re eating.     Ingredients
      

    • 4 Slices Toasted Sourdough Bread
    • 2 Avocados Sliced
    • Microgreens or Sprouts
    • 4 tablespoon Pepitas
    • ¼ Cup Olive Oil
    • 2 Garlic Cloves Halved
    • ½ teaspoon Red Pepper Flakes

    Instructions
     

    • Over low heat, in a small saucepan, warm (not simmer) the olive oil, garlic, and red pepper flakes for about 10 minutes
    • Top toasted bread with avocado slices, microgreens or sprouts, infused olive oil, and pepitas. Finish with flaky sea salt, cracked pepper and another sprinkle of red pepper flakes
    • Once cooled, remove garlic pieces and store leftover olive oil in a small jar
