    Vegan French Toast BLT with Maple Aioli

    This Vegan French Toast BLT with Maple Aioli is what breakfast dreams are made of. Make someone’s morning A LOT better and surprise them with this ULTIMATE sweet and savory breakfast sandwich. They will love you forever!

    How to Make Tofu Bacon for this Vegan French Toast BLT

    You’d be surprised at how much this seasoned tofu resembles the flavor of bacon. Plus, it’s a lot healthier and cruelty-free!

    Start by pressing your extra-firm tofu. Wrap tofu block in a kitchen towel and place a 3-5 pound weighted object on top. Let the excess water drain for about 15-20 minutes.

    Slice pressed tofu into thin pieces using a knife or mandolin. I get about 20-22 pieces from one block.

    Make the tofu marinade by mixing the following ingredients together:

    • Tamari or Soy Sauce
    • Maple Syrup
    • Olive Oil
    • Vegan Worcestershire
    • Nutritional Yeast
    • Tomato Paste
    • Liquid Smoke
    • Onion Powder
    • Garlic Powder

    Generously grease a large baking sheet. Place tofu pieces on sheet and brush with marinade. Flip over and brush other side with remaining marinade. You should have enough to be fairly generous with the marinade.

    Transfer to the oven and bake at 375°F for 15-20 minutes, or until desired crispiness. Brush on extra marinade after baking!

    French Toast – Without Eggs!

    Yes! Surprisingly, you don’t need eggs to make french toast. This version is just as delicious and crispy without them, trust me! I actually like this better than the original.

    While your tofu is baking, start making the french toast.

    1. Whisk all the ingredients together in a bowl large enough to dip your bread into
    2. Heat some butter or coconut oil in a pan or griddle over medium heat
    3. Dip bread into batter, making sure to coat both sides, and add to the pan or griddle
    4. Cook each side for about 3-5 minutes, or until golden brown and crispy
    5. Repeat with remaining slices

    What Kind of Bread Works Best for French Toast?

    It’s best to use a sturdy bread that isn’t fresh. I like sourdough, french, semolina, or even Texas Toast.

    Ingredients
      

    French Toast

    • 8 Slices Thick-Sliced Bread Like French or Sourdough (at least day old or more)
    • 1 Cup Plant-Based Milk – I used Extra Creamy Oat
    • ¼ Cup Cornstarch
    • 1 tablespoon Ground Flaxseed
    • 1 tablespoon Maple Syrup
    • 1 teaspoon Cinnamon
    • 1 teaspoon Vanilla
    • ½ teaspoon Baking Powder

    Maple Aioli

    • ⅓ Cup Vegan Mayo
    • 2 tablespoon Maple Syrup
    • Pinch of Sea Salt

    For Serving

    • Vegan Tofu Bacon
    • Lettuce
    • Tomato
    • Additional Syrup for Dipping Optional
    • Powdered Sugar Optional

    Instructions
     

    French Toast

    • Whisk all ingredients together except for bread in a shallow bowl large enough to dip bread into
    • Heat a small amount of butter or coconut oil in a pan or griddle over medium heat
    • Dip bread into the batter, coating both sides. You may need to quickly whisk batter before dipping each new piece of bread
    • Add bread to the pan or griddle and cook each side for about 3-5 minutes, or until golden brown and crispy. Repeat with remaining slices

    Maple Aioli

    • Mix all ingredients together and set aside until ready to use

    For Serving

    • Add maple aioli, tofu bacon, lettuce, and sliced tomato in between 2 pieces of french toast and serve with extra syrup for dipping. Dust with powdered sugar if you want!
