Turn the childhood classic PB&J sandwich (that we all know and love) into a delicious, healthy, and protein-packed smoothie. Combine layers of berry compote with creamy peanut butter and banana, and you get this gorgeous-looking breakfast, snack, or dessert. Young or old, this Vegan Peanut Butter & Jelly smoothie might be your new favorite way to start the day!
Ingredients:
- Frozen Bananas
- Frozen Cauliflower (or Ice Cubes)
- Peanut Butter
- Almond Milk
- Dates
- Oats
- Vegan Vanilla Protein Powder
- Berry Compote: Mixed Berries, Agave, Orange Juice, Chia Seeds
Let’s Make This Peanut Butter & Jelly Smoothie
Start by making the berry compote since this has to chill before adding to your smoothie. You might even want to make this the night before. Combine fresh or frozen mixed berries with orange juice and agave in a small pot. Bring to a light simmer over medium heat. Continue to cook for about 10 minutes, occasionally stirring to break up the fruit pieces with a whisk or fork. Remove from heat and stir in the chia seeds.
Once your berry compote has chilled, make the smoothie by adding all other ingredients to a high-powered blender. Blend on high until creamy, stopping to scrape down the sides if necessary. I like to use my tamp here.
Make the smoothie by layering the berry compote with the peanut butter smoothie mixture. If you’d like, top with extra fruit and peanut butter. We like to swirl everything together to combine before drinking.
Tips
To ensure your smoothie bowl has the correct ice cream-like consistency, make sure to use frozen bananas. To freeze your bananas, cut into 1-inch pieces, arrange them on a baking sheet in a single layer, and transfer them to the freezer. Once frozen, you can store them together in a ziplock baggie or other freezer-safe container. I like to keep an eye out for brown or spotty bananas at local grocery stores, as they’re often priced considerably lower than the other bananas.
A high-powered blender, like a Vitamix, is also very important to achieve a smooth consistency. Try to use as little liquid as possible when blending. I use the tamp that came with my blender to help push all ingredients into the blades. The tamp also helps remove air pockets which allows for a smoother and desirable smoothie consistency.
Try adding frozen cauliflower for even more nutrients. You won’t even know it’s in there!
